There
is one fast-food dish that is known all over the country. Nevertheless it is
very difficult to find. Its domain usually are dirty street-stalls or good national restaurants. The
only part
of Russia where one can find
it ubiquitously is in Russia ’s
“Southern Resort”. I mean our black sea coast – where usually people from the Northern
Caucasus work.
The name of this magic fast-food is “CHEBUREK”.
Originally it comes from Tatars and Turks, but today we associate it with the Southern part of Russia .
CHEBUREK is a kind of a meat-pie.
Very thin, in the shape of a half-moon, a little bigger than the palm of a two-meters-high guy.
Traditionally inside there should be a thin layer of chopped lamb, but nowadays one can also find beef. The main idea of CHEBUREK is its method of roasting. It is lowered into boiled sunflower oil - it is not healthy at all, but it makes the taste great taste and appearance recognizable. You can’t confuse it with anything else.
For me CHEBUREK is as harmful as a burger from MacDonald’s, but I cant do anything about it - I allow myself it once in half-a-year. Unlike American fast-food, cheburek doesn't need any extra additives like monosodium glutamate – the whole taste works just using onion , salt and pepper. The dough itself is very easy – just water, eggs, flower, oil and salt. The secret ingredient is a shot of vodka – add it in the process of a kneading and you’ll see magic bubbles on top while roasting.
If you are a foreigner and want to try this wonderful meat-pie – don’t try to do it yourself without locals – we have a joke “ people who eat cheburek near railway stations are hard to frighten”. It means that they are so brave that they are not afraid to eat meat in such a dirty place. One never knows what meat is inside – it could be cat or rat. Another joke about cheburek: a buyer asks a seller – did the me t inside bark or meow? The seller’s answer is: the meat also asked this stupid question.
